I really felt like a grilled
cheese sandwich today, partly because I have stumbled upon some great recipes
lately (for example this and this one), but mostly because the autumn has suddenly
arrived with chilly wind and lots of rain.
I know rain is good, especially after such a dry summer, but I wasn’t
very happy about it while I was biking to work. A warm sandwich with lots of melted
cheese is a great comfort food for me, so I made one with a few extras.
I added slices of bell peppers,
because they go very well with cheese, and I had some leftover bacon from the
stuffed mushrooms I made a few days ago, so why wouldn’t have I used it up,
too? To top all that, I dipped the whole sandwich in egg mixture before frying
it in some butter.
Ingredients:
4 slices of bread
2 eggs
two handfuls of a mixture of
grated cheddar and Parmesan cheese
butter
a few slices of bell pepper
a few pieces of bacon
Instructions:
Butter the bread slices,
distribute the grated cheese mixture evenly on them, top two slices with the
pepper slices and the bacon. Close the sandwiches, and dip them well into the
beaten eggs. Heat up some butter in a frying pan, and fry both sides of the
sandwiches until golden brown. Serve immediately.
