Summer rice salad

This is a very colorful and versatile rice salad, it has tuna, artichokes, capers, tomatoes, onions and diced cheese in it.

300 g (9.5 oz) rice
130 g (4.5 oz) canned tuna
200 g Grana Padano cheese
8 canned artichoke hearts
4 tomatoes
1 big onion
2 tablespoons of capers
juice of 1 lemon
3 tablespoons of olive oil


Cook the rice in salted water, then rinse in cold water, and drain. Put in a huge salad bowl. Add the drained canned tuna flakes, the capers and the artichokes hearts. Dice the cheese and the tomatoes, and mix in. Cook the onion for about 10 minutes, then chop, and add to the salad. Mix together the olive oil and the lemon juice, and drizzle it on the salad. Season with salt.
